Researchers prepared 5-0-acyl-1,2-O-isopropylidene-D-xylofuranose and 6-O-acyl-1,2,3,4-di-O-isopropylidene-D-galactopyranose from the enzymatic reaction of the corresponding monosaccharide acetals with commercial (crude) fatty acid mixtures. Subsequent acid catalyzed hydrolyses of the isopropylidene groups produced monosaccharide esters with overally yields of between 59 and 88 percent. In contrast to sugar fatty acid esters perpared by high temperature transesterificatin, the enzymatically prduced monosaccharide esters were relatively pure. The researchers characterized the results as prmising, but caution ed that it would be premature to assume that the use of enzymes can provide a commercial alternative to conventional methods of manufacturing industrial detergents and other bulk surfactants. 11 refs.
