glucose oxidase and catalase were coimmobilized on polyethylenimine-coated cotton cloth by adsorption followed by cross-linking with glutaraldehyde. the cloth-bound glucose oxidase-catalase could serve as an efficient and easily retrievable system for the repeated desugaring of egg melange in a batch reactor it is shown that unlike the particulate supports used for immobilizing glucose oxidase, the cloth-bound enzyme could find wide application in the desugaring of eggs. cloth not only provides a mechanically stable matrix with large surface area and ease of complete retrieval from viscous egg melange, but is also amenable for fabrication of any required reactor geometry for large-scale application.
