this paper discusses the use of microbial enzymes to convert starch to sugar and yeast to convert sugar to alcohol. some of the innovations include - use of membrane reactors, use of flocculant yeast for easy settling, immobilized cell reactors and use of genetic techniques to modify microorganisms. one of the most existing possibilities for the future is the conversion of pentose sugars from hemicellulose into ethanol. these components are associated with starch, as fiber, in many natural sources including wheat and barely starches. new bacteria and modified yeasts will probably be used to ferment the various pentose bacteria and modified yeasts will probably be used to ferment the various pentose sugars. 3 refs
