antioxidant activity of models system products of maillard reaction on cotton seed oil

the reaction products of heated amino acids - glucose mixture, amino acids and b. h. t. were evaluated as an antioxidant on cotton seed oil stored at 50 $degree$ c for one month. peroxide, acid and iodine values of the oil were measured to determine the rate of oxidation during storage. all the three mentioned antioxidants exhibited considerable effect, but the difference was not so significant.
