Characterization and bioactivities of Chitin and Chitosan Regulated Their Degree of Deacetylation.

Researchers investigated chitin and chitosan, a heterocopolymer of N-acetyl-beta-D-glucosamine (GlcNAc) and D-glucosamine (GlcN), to determine the degree of deacetylation, sequence regularity, and relationship between bioactivities and degree of deacetylation. Nitrous acid deamination and Beroullian statistical analysis investigated the sequence regularity. Infrared spectroscopy determined the degree of deacetylation. Results indicated a random distribution of GlcNAc residues in deacetylated chitin and partially N-acetylated chitosan. The bioactivities were strongly dependent on the degree of deacetylation. 58 refs.
