Esterification of the polysaccharides with propylene oxide under various conditions synthesized hydroxypropyl derivatives of chitin and chitosan with different degrees of substitution. Hydrogen one and carbon 13 nuclear magnetic resonance(NMR) spectroscpy characterized the molecular structure of the hydroxypropyl derivatives. Equations based on spectral data determined the molar substitution, degree of pendants, and degree of substitution of the hydroxypropyl derivatives. Light absorption and polarized light optical microscopy examined the phase behavior and liquid crystalline characteristics of te aqueous solutions of the derivatives. Aqueous solution of hydroxypropyl derivatives became phase separated and turbid at an elevated temperature. The cloud point varied, depending on the degree of substitution and molecular weight of the hydroxypropyl derivative, concentration of the solution, and coexistence of inorganic salts. 16refs.
