Ionic liquids are effective solvents for a wide range of organic, inorganic, and polymeric containing organic cations and inorganic anions. They are easy to recycle, are nonflammable, and have no detectable as replacements for volatile organic compounds used as industrial solvents. Ionic liquids can carry out enzyme catalyzed reactions and other types of biotransformations. Researchers synthesized Z-aspartame, a precursor to the sweetener aspartams, by reacting two amino acid derivatives catalyzed by thermolysin, a proteolytic enzyme, jand the ionic liquid 1-butyl-3-methylimidazolium hexafluorophate as a solvent. Researchers also showed that the hydrolytic enzyme Candide antarctica lipase can catalyze several types of reactions, such as transesterification and perhydrolysis, in ionic liquids.
