Prolamine, the alcohol soluble fraction of corn seed, is known as zein. Researchers determined the thermal properties of zein films cast from aqueous ethanol and methanol. Differential scanning calorimetry determined that all water evaporated from the films at 100 degrees centigrade. The glass transition occurred at 165 degrees centigrade. The amorphous zein crystallized to beta-crystals at 210 degrees centigrade. The films were amorphous in the random coil conformation. 6 refs.
