Dependence of Water-Solubility of Chitosan on Molecular Weight and Acetylation Degree.

Researchers prepared a series of chitosan samples with various molecular weights and degrees of acetylation and investigated their water solubilities. They treated chitosan with NaBO(3) under a homogeneous condition where chitosan was previously dissolved in an aqueous acidic solution to reduce its molecular weight. GPC equipped with a LALLS determined the average molecular weights of the chitosan samples. Each chitosan sample was N-acetylated with acetic anhydride under a homogeneous condition. Nuclear magnetic resonance estimated the degree of N-acetylation. The water solubility of the N-acetylated chitosan with a degree of substitution of approximately 50 percent increased as the molecular weight decreased. Nuclear magnetic resonance also determined the sequence of N-acetylglucosamine units. Abstract.
