Chitin is a natural polymer derived from a range of plants and animals, but mostly from the shells of crustaceans. Preparation of chitosan requires deacetylation in concentrated alkaline solutions. Important properties include biodegradability, biocompatibility, and ease of chemical modification. Applications range from pharmaceuticals and food to textiles.
